this is the brekkie of the summer!
okay, so you know brekkie is you breaking-the-fast. it’s truly the most important meal of the day. so why are you beginning it with a coffee? oh not coffee, it’s peanut butter toast… yeh, yum! but, not reaaaalllllyyyy enough protein to keep you full for long and energised…
that’s why I recommend you start your day with 30g of protein (or, thereabouts).
keeping you fuller for longer, helping support blood sugar regulation, cognitive function and giving your brain the “okay, she’s fuelled, go ahead and ovulate”.
now maybe you prefer a savoury brekkie, and I am here for that too. but some days, you need to satisfy a sweet-craving while hitting dem protein goals, amiright?
to make 3 days worth, you’re going to need:
2 scoops of vanilla whey protein powder (I recommend this one).
2 eggs
150g cottage cheese
6 tbsp whole oats
buzz the ingredients together in the nutribullet, or whatever blender you have, until smooth like pancake batter.
pour 3 even portions in to oven-safe glassware + bake for 30-40 mins depending on your oven.
pro tip: line the glass containers with baking paper first to avoid ruining a manicure over the scrubbing of the container (IYKYK).
add ons: cook with frozen berries + cinnamon, or add fresh fruit/yoghurt/maple or honey when serving.
post-workout option: add a whole banana to up the carbs on this bad-boy.
